Abstract
The practical manual substantiates the methodical system of development and application of eco-oriented pedagogical technologies in vocational education; functions, advantages and disadvantages of using the case method in eco-oriented professional training of future chefs; practical recommendations for the development of ecologically oriented educational cases on sanitation, hygiene, physiology for the professional and theoretical training of future chefs and the formation of their energy-efficient culture are laid out. Addressed to managers, teachers, masters of industrial training, methodologists of educational (scientific) and methodical centers (offices) of vocational and technical education.
