Abstract

The training manual reveals organizational processes of customer service in the restaurant business establishments, described techniques, forms and methods of work of staff. An types and structure of the premises institutions restaurant industry, the basic requirements for drawing up menus, maps, beverages, general rules and principles supply production facilities restaurant facilities of various types and forms of ownership. The features and rules of supply of food and beverages, forms and methods of customer service both in the trade halls institutions restaurant industry and beyond. Outlined the functional responsibilities of the master catering, ways of HR processes. The content of the manual is structured according to typical curriculum for the subject "Organization and technology services in institutions restaurant industry" State standard of vocational education professions Ukraine 2139 "Master catering", approved by the MES of Ukraine № 1494 of 28.10. 2013 The manual is intended for training services in the areas of vocational education and training institutions of different ownership.
