Abstract

The proposed textbook outlines the techniques and techniques of preparation of raw materials, preparation of confectionery products using the latest technologies. It contains technological schemes, tables, illustrations of finished products, which help to develop in future professionals the skills necessary to master the profession of confectioner. The publication is intended for use in institutions of professional (vocational and technical) education, which provide training for future skilled workers in the restaurant industry.
